I too am toying with vegan (mainly because my digestion - but veganism has many things going for it such as economy and feeling at peace as I pat a sheep...)

But re. salting beans while cooking - I have heard this toughens them up and slows down cooking, and that the salt is added after the beans are cooked.

Thanks for great bean recipes. I am going to soak the next lot now!</description>
