SLOW COOKER / CROCKPOT

  • Chicken Rice Soup

  • Slow Cooker Mexican-Style Chicken for a Crowd
  • Pot Roast (potatoes, carrots, onions, beef roast – veggies on bottom; also works with chicken)
  • Chicken breasts/beef roast/steak/beans and salsa in the crock pot and serve with lettuce/greens, tomatoes, onions, avocados, Daiya on corn tortillas, corn chips, or rice
  • Lentils, chickpeas, rice, onions, garlic, salt, and cover with water
  • Chicken thighs (boneless, skinless) in a crock pot, sprinkle with cumin, and garlic salt, maybe some red pepper. Turn on and let it cook all day. Shred in the crock pot about 30 minutes before dinner. Serve with corn tortillas, avocado, and chopped tomatoes and lettuce…yum!
  • Pork with mojo with rice and salad
  • Pork roast on the bottom, potatoes in aluminum foil, and can usually fit a veggie in there, too. Put a tiny bit of water in the bottom. Start around 10-11 and it is ready by dinner time.
